Meet Our Executive Chef - Jackson Local Michael Gallivan
Haydens Post prides itself on locally-sourced ingredients, so it was natural to tap long-time Jackson resident Michael Gallivan as the Executive Chef. He's lived, breathed, cross-country skied, snowmobiled, fished, camped, and cooked in the Tetons as far back as 1976. Gallivan skipped town to graduate from New York's Culinary Institute of America in 1979, and refine his craft in the east's finest, but never lost his tip-of-the-hat taste. In 1991, he and his wife moved west, and raised three sons Jackson-right, starting with home-made baby food. Gallivan's scratch recipes and local knowledge will make you feel right at home, too.
Try our Signature Cocktail, The Velvet Antler
Old West mavericks meet their match with our mountain mixologists in this crafty signature concoction. Liquid courage from tip-to-tip that welcomes the lips with a cinnamon sugar rim, the Velvet Antler's adventure is boldly built around Patron Cafe XO - a sublimely invigoration fusion of Patron Silver and the essences of coffee and chocolate. Buttershots, locally-sourced cream and Creme de Cacao salute a smooth and sweet journey. Finally, the engaging elixir is crowned by cinnamon dust in the shape of the symbol of the king of the Tetons - the grand buck's points.
Tip-of-the-hat translates to tantalization of the taste buds, in our Private Dining Room. Grand as the Tetons, and as comfortable as a warm fireplace, treat up to 12 to the ultimate, intimate setting for sharing cuisine and company.
