Rachel's Green Smoothie

Executive Chef Rachel Jacobs, knows about the power of food that's good for your body. She spent several months preparing herself to journey along the Pacific Crest Trail with a combination of hot yoga, bicycling, and surfing - sometimes all in the same day! We sat down with her to ask "what's your favorite green smoothie recipe?" 

  • 1 Green Apple
  • 4 Leaves of Black Kale
  • 1 Cup of Fresh Spinach
  • 1 Cup of Water
  • 1/2 Cup of Fresh Broccoli Florets
  • 1 Frozen Banana Peeled 
  • 1/4 Cup of Aloe Vera Gel Removed from Leaf
  • 1 Small (Pinky-Tip Sized) Piece of Fresh Ginger Root Peeled 
  • 1 Small (Pinky-Tip Sized) Piece of Fresh Turmeric 
  • 1 Small Pinch of Freshly Ground Black Pepper

Add all ingredients except water. Begin to blend and slowly pour in water as needed to desired consistency. 

For a tropical twist, replace cup of water with coconut water instead! 

YOGA

Here in Jackson Hole, we have been experiencing a rise in yoga studios, classes, and instructors, and we are glad of it. Here at Snow King Resort, we are fully committed to inspiring and fostering health and wellness for all of our guests. On that note, we are pleased to introduce you all to our local master yoga instructor, Neesa Zollinger. Not only does she own the nearby Akasha Yoga Studio, but she’s also our recommended yoga instructor primarily teaching yoga to private events. We sat down to chat with her about all things yoga.

Haydens Post Spinach Salad featuring Lemon Vinaigrette

Haydens Post Lemon Vin.

Hayden's Post Lemon Vinaigrette is perfect over spinach salad at lunch or for dipping fresh veggies when you're looking for a satisfying and healthy snack. 

  • 1 Fresh Lemon, Zested and Juiced
  • 1/2 Cup Rice Vinegar
  • 3oz Agave Nectar
  • 2 tsp Kosher Salt
  • 6 Cloves Garlic, Peeled
  • 4 Tbsp Dijon Mustard
  • 1 tsp Freshly Ground Black Pepper
  • 1/2 Cup Water
  • 3 Cups Olive Oil 

Combine all ingredients, except olive oil into blender. Turn blender on low speed allowing ingredients to mix. Slowly begin to drizzle in olive oil while blender is on. Start very slowly, drops at a time, moving to a steady thin stream. If the oil is added too fast, the dressing will break and it won't come back together. After adding all oil, your patience is rewarded with this delicious, wholesome and vegan vinaigrette!
